Ingredients to make Two-Ingredient Cottage Cheese Bread

There are only 2 main ingredients in this recipe:

  • Cottage cheese: This creamy cheese not only adds a rich, moist texture to the bread but also provides a boost of protein, making it a nutritious choice. I prefer to use full-fat cottage cheese.
  • Egg whites: Acting as a binding agent, egg whites help hold the ingredients together while contributing to the bread’s structure and softness. They also add additional protein to the recipe.
  • Cornstarch: Cornstarch acts as a stabilizer, helping to maintain the structure of the whipped egg whites and preventing them from collapsing too quickly. This results in a more stable and voluminous bread.
  • Optional add-ins: While the base recipe requires only two ingredients, you can customize your bread by adding herbs, spices, or even shredded cheese for extra flavor and texture.

That’s it! With just these two simple ingredients, you can create a delicious and protein-packed loaf of cottage cheese bread in no time.

How to Make Two-Ingredient Cottage Cheese Bread

You’ll be amazed at how effortlessly this recipe comes together. The key to achieving a perfectly moist yet airy texture lies in properly preparing the cottage cheese and egg whites.

How to Make the Cottage Cheese Bread Batter

  1. Start by separating the egg whites from the yolks, ensuring no yolks contaminate the whites, as this can affect their ability to whip up properly.
  2. In a large mixing bowl, using an electric mixer, whisk the egg whites until they form stiff peaks. This step is crucial for incorporating air into the batter, resulting in a light and fluffy loaf.
  3. In a food processor, blend the cottage cheese until it is smooth.
  4. Next, gently add in the cornstarch and fold in the cottage cheese using a spatula, being careful not to deflate the whipped egg whites.
  5. Once the cornstarch and cottage cheese is evenly incorporated, carefully transfer the mixture into a prepared loaf pan or baking sheet lined with parchment paper.
  6. Smooth out the top of the batter with the back of a spoon or spatula, ensuring it’s evenly distributed in the pan.

  2. Allow the bread to cool slightly before slicing and serving.

Tips for Making the Best 2 Ingredient Bread

  • Don’t skip the step of properly separating the egg whites. Ensuring there are no traces of yolk in the whites is essential for achieving the desired whipped texture, which contributes to the lightness of the bread.
  • Whip the egg whites until stiff peaks form. This may take a few minutes, but it’s crucial for incorporating air into the batter and achieving a fluffy loaf.
  • Be gentle when folding in the cottage cheese. Overmixing can deflate the whipped egg whites, resulting in a denser bread. Use a spatula to gently fold in the cottage cheese until just combined. Do not over blend cottage cheese.
  • Experiment with optional add-ins. While the base recipe requires only two ingredients, feel free to get creative by adding herbs, spices, or even shredded cheese to customize the flavor to your liking.
  • Ensure proper baking time. While it’s tempting to remove the bread from the oven as soon as it looks done, it’s essential to bake it until a toothpick inserted into the center comes out clean. This ensures that the bread is fully cooked through and avoids any gummy texture.
  • Let the bread cool before slicing. Allowing the bread to cool slightly in the pan before transferring it to a wire rack to cool completely helps to set the structure and ensures easier slicing.

Popular Substitutions & Additions for Two-Ingredient Bread

  • Transform them into muffins. Simply portion the batter into 12 muffin cups and bake for approximately 20 – 25 minutes for a convenient grab-and-go option.
  • Incorporate Greek yogurt for added richness and tanginess. You can substitute a portion of the cottage cheese with Greek yogurt for a creamier texture and a boost of protein.
  • Experiment with active dry yeast for a different texture. While the traditional recipe doesn’t require yeast, incorporating active dry yeast and lukewarm water can yield a slightly different texture and flavor profile. Just be sure to allow extra time for rising.
  • Experiment with add-ins. Elevate the flavor profile by folding in half a cup of chocolate chips or chopped dried fruits like raisins, cranberries, or dates into the batter for some sweetness and crunchy texture.
  • Enhance with lemon zest for a citrusy twist. Add freshness to the bread by incorporating lemon zest into the batter, or take it to the next level by drizzling cream cheese frosting infused with lemon juice on top once the bread has cooled completely.

How To Store & Reheat Two-Ingredient Cottage Cheese Bread

Store the bread in an airtight container or wrap it tightly in plastic wrap to maintain freshness. At room temperature, the bread can last for up to 3 days, ensuring you have easy access to a quick and delicious snack or meal addition.

How Long Will Cottage Cheese Bread Last in the Fridge?

If you prefer to extend the shelf life of your bread, storing it in the refrigerator can keep it fresh for up to a week. This is particularly useful if you’ve made a larger batch or anticipate not consuming the bread within a few days.

Can I Freeze Two-Ingredient Cottage Cheese Bread?

You definitely can, but I advise against it because the texture will definitely change.

But if you really want to freeze your cottage cheese bread, then ensure the bread is completely cooled before wrapping it tightly in plastic wrap and placing it in a freezer-safe zip-top bag.

Be sure to remove as much air as possible to prevent freezer burn. The frozen bread can last for up to 3 months in the freezer. When you’re ready to eat it, simply thaw the bread at room temperature, and if desired, reheat it in the toaster oven for a few minutes until warm and toasty.

Bonus: How to make this cloud bread more like angel food cake / bread texture:

Even though the recipe I have listed is for a simple 2-ingredient high protein bread, I did want to provide an alternative recipe just incase you prefer more of a bread texture versus cloud bread texture:

Ingredients:

  • 1 1/2 teaspoons active dry yeast
  • 1/3 cup lukewarm water
  • 1 cup egg whites (from 7 to 8 medium eggs)
  • 1 cup cottage cheese
  • 4 2/3 cups bread flour, plus more for dusting (you can use self-rising flour instead and eliminate the steps for dry yeast and water)
  • 1 tablespoon kosher salt

Instructions:

Activate, Blend, and Whisk:

  • In a mixing bowl, combine the active dry yeast and 1/3 cup water. Set it aside.
  • In a food processor or blender, blend the egg whites and cottage cheese until smooth.
  • When the yeast mixture is hydrated (and cloudy), add the egg-white-cottage cheese mixture and whisk to combine.

Combine Dry and Wet Ingredients:

  • Whisk the bread flour to remove any lumps and aerate it.
  • Add the flour and kosher salt to the wet mixture. Whisk to combine until a sticky dough forms.

Knead the dough:

  • Dust a work surface with flour and place the dough on it. Dust your hands as well to prevent sticking.
  • Knead the dough for about 5 minutes until it looks smooth. Use a scraper to lift the sticky dough.
  • Shape it into a ball and place it in a mixing bowl. Cover and proof the dough in a warm spot for an hour, until almost doubled in size.

Punch down & pan:

  • Line a 10×4-inch loaf pan with parchment paper.
  • Punch down the dough to deflate it. Roll it into a log and stitch the ends by pinching them together.
  • Proof the bread in the loaf pan for 20 to 25 minutes, until it looks risen and puffed up.
  • After the final proofing, make a slit in the middle using a sharp knife or razor blade.

Bake it:

  • Preheat your oven to 350°F (175°C).
  • Bake the bread for about 40-45 minutes or until it’s golden brown and sounds hollow when tapped.
  • Let it cool before slicing and enjoying your homemade loaf of Cottage Cheese Bread!

This cottage cheese bread is a delicious and nutritious treat that can be enjoyed as a breakfast, snack, or dessert after a meal. This is a great recipe to add least 15 grams of protein per serving to your meals and snacks.

What is the taste of cloud bread?

After making this TikTok viral cloud bread, I want to make sure I tell you what it tastes like and my honest thoughts!

I do love this recipe and think it is a great addition to breakfast or snacks, but please do not expect it to taste like bread as all the usual bread ingredients are not included in this recipe. It does taste slightly like eggs, but you can easily mask that with the toppings you choose to add. I would not advise using this recipe as a bread substitute, but it can be a great way to boost your protein intake!
