You definitely can, but I advise against it because the texture will definitely change.

But if you really want to freeze your cottage cheese bread, then ensure the bread is completely cooled before wrapping it tightly in plastic wrap and placing it in a freezer-safe zip-top bag.

Be sure to remove as much air as possible to prevent freezer burn. The frozen bread can last for up to 3 months in the freezer. When you’re ready to eat it, simply thaw the bread at room temperature, and if desired, reheat it in the toaster oven for a few minutes until warm and toasty. 

Bonus: How to make this cloud bread more like angel food cake / bread texture: 

Even though the recipe I have listed is for a simple 2-ingredient high protein bread, I did want to provide an alternative recipe just incase you prefer more of a bread texture versus cloud bread texture:

Ingredients:

  • 1 1/2 teaspoons active dry yeast
  • 1/3 cup lukewarm water
  • 1 cup egg whites (from 7 to 8 medium eggs)
  • 1 cup cottage cheese
  • 4 2/3 cups bread flour, plus more for dusting (you can use self-rising flour instead and eliminate the steps for dry yeast and water)
  • 1 tablespoon kosher salt

Instructions:

Activate, Blend, and Whisk:

  • In a mixing bowl, combine the active dry yeast and 1/3 cup water. Set it aside.
  • In a food processor or blender, blend the egg whites and cottage cheese until smooth.
  • When the yeast mixture is hydrated (and cloudy), add the egg-white-cottage cheese mixture and whisk to combine.

Combine Dry and Wet Ingredients:

  • Whisk the bread flour to remove any lumps and aerate it.
  • Add the flour and kosher salt to the wet mixture. Whisk to combine until a sticky dough forms. 

Knead the dough:

  • Dust a work surface with flour and place the dough on it. Dust your hands as well to prevent sticking.
  • Knead the dough for about 5 minutes until it looks smooth. Use a scraper to lift the sticky dough.
  • Shape it into a ball and place it in a mixing bowl. Cover and proof the dough in a warm spot for an hour, until almost doubled in size.

Punch down & pan:

  • Line a 10×4-inch loaf pan with parchment paper.
  • Punch down the dough to deflate it. Roll it into a log and stitch the ends by pinching them together.
  • Proof the bread in the loaf pan for 20 to 25 minutes, until it looks risen and puffed up.
  • After the final proofing, make a slit in the middle using a sharp knife or razor blade.

Bake it:

  • Preheat your oven to 350°F (175°C).
  • Bake the bread for about 40-45 minutes or until it’s golden brown and sounds hollow when tapped.
  • Let it cool before slicing and enjoying your homemade loaf of Cottage Cheese Bread!

I do love this recipe and think it is a great addition to breakfast or snacks, but please do not expect it to taste like bread as all the usual bread ingredients are not included in this recipe. It does taste slightly like eggs, but you can easily mask that with the toppings you choose to add. I would not advise using this recipe as a bread substitute, but it can be a great way to boost your protein intake!
