  • Preheat your oven to 350°F (175°C) and grease a smaller loaf pan or line it with parchment paper.
  • Start by separating the egg whites from the yolks, ensuring no yolks contaminate the whites, as this can affect their ability to whip up properly.
  • In a large mixing bowl, whisk the egg whites until they form stiff peaks. This step is crucial for incorporating air into the batter, resulting in a light and fluffy loaf.
  • In a food processor or high speed blender, blend the cottage cheese until smooth and creamy (about 1 minute).
  • Next, gently fold in the cornstarch and cottage cheese using a spatula, being careful not to deflate the whipped egg whites.
  • Once the cornstarch and cottage cheese is evenly incorporated, carefully transfer the mixture into a prepared loaf pan or baking sheet lined with parchment paper.
  • Smooth out the top of the batter with the back of a spoon or spatula, ensuring it's evenly distributed in the pan.
  • Bake in the preheated oven until the bread is golden brown and a toothpick inserted into the center comes out clean. About 30-35 minutes.
  • Allow the bread to cool slightly before slicing and serving.
