Salad

  • 1/2 small cabbage finely chopped
  • 1 large English cucumber finely diced
  • 1 bunch green onions sliced

Chicken

  • 1 pound boneless skinless chicken breast
  • 1/2 lemon juiced
  • 1/4 cup yogurt
  • 2 tbsp olive oil divided
  • 1 tbsp dijon mustard
  • 2 cloves garlic pressed
  • 1/2 tsp turmeric
  • 1/2 tsp salt

Green Goddess Dressing

  • 1/2 lemon juiced
  • 1/3 cup olive oil extra virgin
  • 1 tbsp rice vinegar
  • 1 clove garlic
  • 1/2 small shallot
  • 1/2 cup fresh basil
  • 1 cup spinach
  • 1/2 avocado medium
  • 1/4 cup Greek yogurt
  • 1/2 tsp salt

Instructions
 

  • Cook the chicken: Marinade the chicken with the ingredients, keeping a tablespoon of oil for the skillet. Heat the oil in a skillet over medium-high heat. Cook the chicken until both sides are golden brown, about 5 minutes per side. Once cooked, remove from heat and slice into strips.
  • Make the dressing: In a blender or food processor, add the dressing ingredients and blend until smooth and creamy.
  • Prepare the vegetables: chop and dice vegetables for the salad and add prepared vegetables to a large salad bowl. Add the chicken strips on top and pour the dressing over.
