Ingredients
Salad
- 1/2 small cabbage finely chopped
- 1 large English cucumber finely diced
- 1 bunch green onions sliced
Chicken
- 1 pound boneless skinless chicken breast
- 1/2 lemon juiced
- 1/4 cup yogurt
- 2 tbsp olive oil divided
- 1 tbsp dijon mustard
- 2 cloves garlic pressed
- 1/2 tsp turmeric
- 1/2 tsp salt
Green Goddess Dressing
- 1/2 lemon juiced
- 1/3 cup olive oil extra virgin
- 1 tbsp rice vinegar
- 1 clove garlic
- 1/2 small shallot
- 1/2 cup fresh basil
- 1 cup spinach
- 1/2 avocado medium
- 1/4 cup Greek yogurt
- 1/2 tsp salt
Instructions
- Cook the chicken: Marinade the chicken with the ingredients, keeping a tablespoon of oil for the skillet. Heat the oil in a skillet over medium-high heat. Cook the chicken until both sides are golden brown, about 5 minutes per side. Once cooked, remove from heat and slice into strips.
- Make the dressing: In a blender or food processor, add the dressing ingredients and blend until smooth and creamy.
- Prepare the vegetables: chop and dice vegetables for the salad and add prepared vegetables to a large salad bowl. Add the chicken strips on top and pour the dressing over.
