Kodiak Cakes Chocolate Chip Protein Muffins (No Banana)
These healthy Kodiak Cakes chocolate chip protein muffins are easy, quick and are low in sugar. They are the best high protein breakfast muffins and are made without protein powder or banana and are a great healthy snack or quick breakfast!

- 2 cups Kodiak Cakes Power Cakes Mix - Buttermilk
- 1 teaspoon cinnamon
- 1 1/2 teaspoons baking powder
- 3/4 cup milk of choice
- 1 large egg large
- 2 teaspoons vanilla extract
- 1/3 cup Greek yogurt
- 1/2 cup chocolate chips
Preheat oven to 375ºF. Line a muffin tin with paper liners or spray with nonstick spray.
In a large bowl, whisk together Kodiak mix, cinnamon, and baking powder.
In a separate bowl, whisk together milk, egg, vanilla, and yogurt until smooth.
Gently fold wet into dry until just combined (don’t overmix).
Gently fold in the chocolate chips.
Divide batter into muffin cups, filling about ¾ full.
Bake 16–18 minutes or until tops are golden and spring back when lightly pressed. Cool in pan 5 minutes, then transfer to a wire rack.
- Do not over mix the Kodiak Cakes muffin batter as it can change the texture of the muffins.
- Only fill the muffin tin or the silicone muffin trays 3/4 of the way otherwise they may spill over.
