- 1/3 cup parsley
- 1 yellow onion quartered
- 1 lb ground beef
- 1/2 teaspoon cinnamon
- 1 teaspoon 7 spice
- 1 teaspoon sumac
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
Place the parsley and quartered onion in the bowl of a food processor and pulse until finely chopped. Remove and drain slightly to release excess moisture.
Transfer to a large bowl and add ground beef along with the spices. Mix well.
Divide the meat mixture into equal portions and form them into an oblong shape or log shape. Thread onto metal skewers, flat skewers, or wooden skewers.
Cook the kafta. You can do this either on the grill, in the oven or in a large skillet. On the grill: Place on a preheated grill over medium-high heat for 3-4 minutes per side.In the oven: Bake on a baking sheet at 400 F for 15-20 minutes until cooked through. You can also stuff pita bread with the kafta mixture to make crispy delicious sandwiches. Bake in the oven until meat has browned and the pita bread is crispy. In a large skillet: Pan-fry over medium heat with a bit of olive oil.
Storage: Store any leftovers in an airtight container. They will last about 3-4 days in the fridge.
Make Ahead: Shape the kafta ahead of time and freeze for up to 3 months. When ready to cook, thaw in the fridge overnight or for at least 6-8 hours.
Where to Find Spices: The spices used in this recipe are available at Middle Eastern grocery stores, natural food stores, and many larger supermarkets in the Middle Eastern foods section. You might even come across a pre-mixed "Kafta" spice blend—if so, use 1 ½ tablespoons of that instead of the individual spices. If 7 Spice isn't available, Allspice makes a good substitute.
