Garlic and Rosemary Roasted Potatoes
These rosemary garlic potatoes are soft on the inside and crunchy on the outside! They make the perfect side dish and you can use any type of potato that you have on hand.

- 3 lbs yellow potatoes
- 3 tbsp olive oil
- 5 cloves garlic minced
- 2 tsp dried Rosemary
- 2 tsp salt
- 1/4 cup Parmesan cheese grated
Half the yellow potatoes.
Place potatoes, olive oil, garlic, rosemary, salt into bowl and toss to mix.
Place the mix in the crockpot.
Set the crockpot on low heat and cook for 4-5 hours or on high heat for 2-3 hours.
Sprinkle Parmesan cheese.
For Crispy Potato: Place cut potato edge on the sides of the crockpot, to get a crispy layer on the outside.
Mix it Up: feel free to add your favorite seasoning to the mix. You can also add different toppings like sour cream or parsley.
